my best so far. 2nd time i've done it in an offset. 10lb prime from costco. 7 hours at 250°. bark set in really nice. boat wrapped and topped with tallow. 2 hours at 275-300°. rest for ~2.5 hours. would have loved to let it rest long but had to get my in laws fed.

Did you foil boat it with the fat cap down? Would explain why the flat is drier. You were damn close to a perfect cook
